The Shun Classic 4 inch (10 cm) Paring Knife is the right tool for peeling, paring, or small chopping jobs. While the blade is extremely strong and will hold its edge, Japanese Steel does not have flexibility so we do not advise using this knife on bone in meats, frozen fruits, or stone cutting boards.Faraday's carries the Shun Classic, Shun Premier and Shun Kanso kitchen knife lines made by KAI USA. The beautiful Classic line of Shun Japanese cutlery features the look and benefits of Damascus steel, yet without its rusting problems. This look is achieved by 16 layers of high-carbon stainless steel, wrapped around the VG-10 center core. The D-shaped handle rests precisely in the curve of the fingers. The black PakkaWood handles provide the beauty of genuine wood, but since the wood is impregnated with a waterproof resin, the handles are as durable as plastic and dishwasher safe! (Although we NEVER recommend putting your knives in the dishwasher!).
